Delicious strawberry tiramisu. Recipe from Desserts cookbook (Fun Food series) by Thea Spierings.
- 250 g strawberries
- 4 tablespoons powdered sugar
- 8 tablespoons Limoncino (Italian lemon liqueur)
- 100 g Greek yoghurt
- 250 g mascarpone cheese
- 100 g sponge biscuits
- 1 tablespoon pine nuts, roasted
Slice 200 g of the strawberries, arrange them on a plate and scatter with the powdered sugar and 2 tablespoons of Limoncino. Leave like that for 10 minutes.
Drain the strawberries in a sieve, collecting the moisture. Mix the moisture with the yoghurt and mascarpone. Arrange a few strawberry slices on a plate and cover with some of the mascarpone mixture. Sprinkle a generous amount of the liqueur over 2 sponge biscuits and arrange them on top of the strawberries. Cover with some more of the mascarpone mixture followed by a few slices of strawberry. Top with the mascarpone mixture, a strawberry and a few pine nuts. Make another 3 tiramisu cakes in the same way.
